Holm Oak Shiraz 2023 2016 this adds lovely spice andThe fruit was harvested in mid April when it was showing lovely white pepper and raspberry characters. The fruit was fermented with an inoculated yeast in small open fermenters. The fermenters were either hand plunged or pumped over to ensure good flavour and colour extraction and vibrant fruit characters. Following fermentation, the wine was pressed to a mix of new (20%) and older oak. The wine was matured in oak for 10 months prior to bottling.
